Business of Food at Ballymaloe Cookery School (Nov)

The Business of Food is an essential, information-packed course for anyone looking to start up their own food service business (cafe, restaurant, pub food, coffee shop etc).

Over the course of 10 days, participants are equipped with the knowledge to start their own food-related business.

Course Content / Modules include:

  • Exploring  and developing your Concept
  • Where to start – To Do List – A-Z of getting started
  • Standards and Systems – establishing standards across the business; setting up systems to manage them.
  • Menu Planning and Development – The Basis of most other spending decisions.
  • Legal Issues – overview of the legal boxes you must tick.
  • Food Quality – how to ring fence the quality of your food.
  • Kitchen Management – the engine room of the business- managing your kitchen and the people in it.
  • Finance – setting up a strong financial foundation, understanding the figures, sticking to a budget.
  • Cash – managing and keeping your cash.
  • Interior Design – Designing your Business your way on your budget.
  • Equipment – Knowing what to buy and where to buy it.
  • Suppliers – setting up a mutually beneficial relationship.
  • Front of House Operations Management.
  • Coffee & Tea – sourcing and understanding its place in your business.
  • Hidden Costs – knowing how to find and eliminate these to stop death by a thousand cuts.
  • Staff – finding the right people, training and keeping staff
  • Service Skills- essential skills to give your business the edge.
  • Balancing business and life.
  • Bringing it all together.

The course will be delivered by Blathnaid Bergin and experts in the areas of Finance & Interior Design will assist Blathnaid Bergin during the course.

Course Dates: November 4th -15th, excluding weekends

The course runs over 10 days from 9.00am-5.00pm at the Ballymaloe Cookery School.

The course will include workshops, discussions, case studies, practical sessions, and presentations.

Cost:

The cost of this event via NOTS is €2,520.00 for eligible members (this includes a funding rate of 20%).

Course includes all course materials, and lunch each day.
